Exceptional long-term durability of Coratina monovarietal extra virgin olive oil evaluated through chemical parameters and oxidative stability test

Coratina is a very popular olive cultivar, native of the Apulian region (Italy), but today worldwide cultivated and appreciated. In present study, durability monovarietal extra virgin oils (CMOO), produced in Molise (Southern Italy), was investigated up to 6-years storage metal tin cans, under room temperature darkness. Durability considered time which an oil remained food grade. Yearly, free fatty acids, peroxide value, K232 K270 indices, acid composition, diacylglycerols, phenolic profile Rancimat induction at 130 °C were determined on oil. Free acids value increased linearly over never surpassing European limits set for EVOO category. Conversely, exceeded after five four years, respectively. A linear decrease compounds observed with direct effect oxidative stability measured by test. conclusion, despite some signs aging, CMOO highlighted remarkable long being food-grade 6-years.
